If green is the colour of Ireland, and a soft day the touch, and poteen the taste, and harp music the sound, then a turf fire must be the scent of Ireland. Turf, known also as peat, is partially decomposed vegetable matter, an early form of coal. Most people in rural Ireland burn turf. Most farms have their own turf bog, but these days few cut and "save" their own supply.
